I would think the surejell pectin would have a great recipe, but I might cook it if you can easily (like you do with strawberries, then you don't take up all your freezer space). My grandma always made apricot fruit leather and we ate it and ate it. She made a paste out of the apricots and smear it out to dry on saran wrap, then roll it up, kind of like a primitive all natural fruit roll up.

I just made freezer jam with the sure jell 100% natural pectin. It turned out yummy! I looked at a few, and if you cook the jam it has a lot better fruit to sugar ratio. Freezer jam uses a ton of sugar, but it's so fast and easy!
We love apricot sauce. Just pit the apricots, put in blender with a little sugar and water to taste and boil in boiling water bath. It is great on freshly ground wheat pancakes. You can add ground flax seeds and make the pancakes by using a mix that you get on the internet. Freeze the mix to keep the nutritional value. Also the sauce would be great over your Breyers ice cream I love Breyers also!
oh my bryers....i just had the shaved chocolate one...alf and i ate the whole thing while watching the olympics...how is that for our fitness fad.....but those recepities at the end are fabulous....the pancakes...yummy! gosh I love to eat apricots...i love them love them.....love them! what a great picture.
