Happy Birthday Jessica!
A little something for you:
Treacle Tart
3 Tbsp. Golden syrup
2 oz. Soft White breadcrumbs
1 tsp. Lemon juice
*******
Short Crust Pastry
5 oz. Plain flour
1/2 tsp. Salt
2 1/2 oz. Butter
Flour for rolling out
Set the oven at 400 degrees. To make the pastry, sift the flour and salt into a bowl, then rub in the butter until the mixture resembles fine breadcrumbs. Add enough cold water to make a stiff dough. Press the dough together with your fingertips.
Roll out the pastry on a lightly foured surface and use just over three quarters of it to line an 8- inch pie plate, reserving the rest for a lattice topping.
Melt the syrup in a saucepan. Stir in the breadcrumbs and lemon juice, then pour the mixture into the prepared pastry case.
Roll out the reserved pastry to a rectangle and cut into 1/2 inch strips. Arrange in a lattice on top of the tart. Bake for about 30 minutes.
**Updated to add: Jessica is my sister-in-law who is an AVID reader. She reads and reads and reads.... She has read not only all of the Harry Potter books, but also the original British versions of them! Because of this, she was curious about all the references to Treacle Tart. Luckily, I have a good authentic English cookbook: Mrs. Beeton's Book of Cookery. Golden syrup comes in a can, but I believe it's the same thing as Karo syrup.
